Function vatha kuzhambu recipe need some fried ingredients that's all. The important think is small onions, dry roast red chilly, dhaniya and cumin seeds it's a important think in this recipe.
Ingridiants :
Brinjal- 6 nos
Butter beans/ motchai- 1/2 cup.
Small Onion - 15 nos
Tamarind- 1 lemon size.
Turmeric powder- 1/2 tsp.
Chilly powder- 3 tsp.
Salt as needed
For Grind:
Red Chilly - 7 nos
Coriander/ dhaniya seeds - 1 cup
Cumin seeds - 2 tsp
For seasoning:
Oil - 5 tsp
Mustard seeds- 1 tsp
curry leaves- 1 strip
green chilly- 1 no
sun berry/manathakkali vathal -2 tsp
Garlic- 15 nos
For Garnishing:
Coriander leaves - finely chopped
Preparation:
Sock butter beans 4 hours. NOTE: if forget to sock before boil it min 5 min.
Sock tamarind into water.
Dry roast coriander seeds, red chilly, and cumin seeds one buy one.
grind it in powder.
Keep all the ingredients ready.
Method :
Heat oil in a kadai add mustard seeds when its sizzle add curry leaves, green chilly, garlic and onions and saute it until it turns golden brown. Add salt to the onions to quicken the process.
Add brinjal and butter beans saute for a few more minutes.
Add tamarind juice then add turmeric powder, chilly powder, grind powder mentioned under "for grind" and add salt as needed.
Cook until the gravy oozes out oil ,you can see the color difference before and after it is cooked.
At this time side by side heat one spoon oil in another pan add sun berry/ manathakkali vathal make it little black.
Add the vathal into gravy and mix well.
function vatha kuzhambu ready.
Cook on low heat stirring from time to time.
